Fresh Sweet Peas with Feta Cheese Recipe

When I lived in San Francisco there was an amazing Greek restaurant Kokkari that was so close to my office. In Greece and Turkey we love to bring vegetables with either yoghurt or feta cheese. This dish is one of them and I discovered it in Kokkari and loved it. Do not forget to visit this restaurant if you are in San Francisco and love Turkish and Greek food. You can also buy its cookbook. I use recipe from this book.


All you need is fresh peas, feta cheese and herbs for this fresh pea salad. You can try it with frozen peas too. All we do is to blanch peas in boiled water until it loses its raw taste and bring out its sweet flavor. We do not want to cook through the peas, it will stay little bit crunchy.

Fresh Sweet Peas Salad with Feta Cheese Ingredients:

2 cups shelled English peas (almost 2 pounds peas in pod)

4 ounces (113 gram) 3/4 cup crumbled feta cheese

1/4 cup extra virgin olive oil

2 tbsp scallions (green and white parts included) or chives, finely diced

2 tbsp dill, chopped

Half lemon

freshly ground pepper


How to Make Fresh Sweet Peas Salad with Feta Cheese

In a big pot boil water and add salt.


Add peas and boil until its rawness turn into sweetness. It should take about 30 seconds or 1.5 minutes depending on your pot and heat. We don't want to cook through but we also want to bring out the sweet taste. So taste it every 30 seconds to make sure peas are sweet. You will sense it right away, it is amazing how heat brings out sweetness from peas. After we are done put peas in a tray and let it cool.


Put the feta cheese in a bowl and add the olive oil. Mix them well. Add cooled peas and mix. Then add scallions and dill.


At this point you can transfer the mix to another plate if you want to. Add lemon juice and add fresh black pepper and add more dill and scallion as garnish


Serve immediately.
