Turkish Sour Beef Meatballs Soup Recipe

This is a soup from my childhood. My mother used to make this soup for us often. But I have forgotten about this recipe after I moved to US.This soup's speciality its sour taste. It is a very hearty dish especially for winter days. It will warm you up immediately.
For this soup, all you have to do is mix and knead the beef, rice, grated onion and spices and divide the mixture into small meatballs, and dip in flour. Then we cook carrots, potatoes and garlic in a large pot with oil. Add tomato paste if you are using. Add water and add spices and meatballs after water is boiled. See detailed recipe below
500 grams of ground beef
1 onion, grated
1/4 cups rice
1/2 cups flour
1 teaspoon of salt
red chili peppers (optional)
2 tablespoons of olive oil
1 potato, peeled and diced in small cubes
1 carrot, peeled and diced in small cubes
1 garlic clove, crushed
1 tablespoon tomato paste (optional)
8 glasses of water
1 egg yolk
1 lemon juice
3 tablespoons Greek yoghurt (without water if possible)
Before you use the beef, take it out and wait for it to reach room temperature. Meanwhile, wash and drain the rice. Grate the onion and drain the juice. Mix the ground beef, rice, grated onion and spices in a bowl and knead. Make bite size small meatballs from the meat mixture. Add flour to another bowl and add meatballs here and cover it with flour. Keep meatballs aside until vegetables cooked.
After peeling the potatoes and carrots, we cut them into bite-sized pieces. We heat the oil in a large saucepan and start sauté potatoes and the carrots. We add the crushed garlic on top and continue sautéing. If you are going to use tomato paste, add the tomato paste here and add water. We boil the water and add salt, black pepper and, if used, thyme. And at this stage we add the meatballs. We cook the mixture until it is cooked for 20-30 minutes.
Meanwhile, mix plain Greek yogurt, egg yolk and juice of 1 lemon. After meatballs are cooked through, we take some water from the pot and add it to the yogurt mixture and raise the temperature of the yogurt mixture. Very hot and very cold liquids do not mix. Our aim is to increase the temperature of the sauce a little. Then we add all the sauce to the soup, mix it and cook the soup for 10 minutes on low heat. Do not forget to check the salt.
