Hummus, one of the most popular appetizers of the Middle East, is popular all over the world due to its very healthy nature. It is a very easy and practical recipe made with very little ingredients. Naturally vegan and gluten free. The two main ingredients of hummus are cooked chickpeas and tahini. If you cook chickpeas and use freshly baked chickpeas, your hummus will be tastier and fresher. But you can also use canned chickpeas. If you are going to use canned chickpeas, wash the chickpeas very well and separate the shells. Anyway, the skins will come out as you wash the chickpeas. If you cook the chickpeas, you can easily remove their skin while they are hot. The shell of chickpeas is both tasteless and unnecessary because it causes gas, it is not very digestible.
We process cooked chickpeas in a food processor, add tahini and mix them in the food processor. Then we add garlic, salt, cumin and lemon juice. Cumin is optional but you should definitely add lemon juice, garlic and salt. We also add water to make the texture of hummus fluid and soft. I've written the estimated measurements below, but please add ingredients slowly and taste it and adjust the quantity according to your tastebuds. See the details below
Naturally vegan and gluten free
250 g chickpeas (600 grams (3 cups) cooked)

270 grams of tahini
4 tablespoons of lemon juice

100 ml cold water

Cover the chickpeas in a large bowl with plenty of water the night before. The next day you will see the chickpeas swelling. Wash the chickpeas, drain the water and start to heat them in a pot with 1.5 liters of water over high heat. After the water boils, take the white cloudy masses formed on it with the help of a spoon and throw it away. Chickpeas are usually cooked for 20-40 minutes, depending on the type and freshness of the chickpea you use. After the chickpeas are cooked, you can easily crush them between your fingers. After the chickpeas are cooked, you will see that the skins come off easily, remove the skins.
Puree the chickpeas in the food processor. Add tahini, salt, cumin, lemon juice and garlic on top. Add cold water last and run the food processor for 5 minutes until you achieve a creamy texture. Wait 30 minutes without using it.
